Kaia is an Asian-Pacific-inspired restaurant on our rooftop, with views overlooking the White House, US Treasury and Washington Monument. The food is inspired by tropical climates and serves dishes full of color, including Poké bowls, robata grills and sushi.

As the Sushi Chef De Partie, reporting directly into the Head Sushi Chef you will:

• Butcher and care for whole fish, make sashimi, nigiri, sushi rice and sushi rolls expeditiously.
• Work with the Sous Chef and Executive Chef to lead the sushi team in the production of our food, compiling the daily mise-en-place, and ensuring that all food is cooked and presented to our exceptional Ned standards
• Lead our sushi section at Kaia on a day-to-day basis and support the entire kitchen operation in the absence of senior Chef's
• Support with all people leadership tasks for Kaia - including team recruitment, development and performance chats, onboarding new starters - this is a great role for an aspiring Sous Chef who wants to build their people management skillset
• Be a guardian of food quality and presentation, monitoring all food leaving your kitchen and providing coaching and feedback to the team where needed
• Create and monitor a safe and clean kitchen environment, protecting our guests and team from any possible harm
• Protect our excellent food safety ratings and audit standards by always keeping a close eye on procedures and practices, keeping impeccable records, and implementing action plans where necessary
• Be a mainstay of our kitchen team, you'll be preparing all meat, fish, sushi, poultry, and vegetables

What you can bring to the role:

• Broad experience in all sushi skills
• Experience in a culinary leadership role in an Asian restaurant concept
• Previous kitchen leadership experience with a proven track record of delivering outstanding food and people management
• High standards are essential
• An organized and detailed manner is necessary, as impeccable record keeping is needed to maintain records for our safety and audit standards
• Creative flare is always welcome - our menus change seasonally, and you may be offered the opportunity to support with food design and creation
• A calm demeanor and a genuine passion for providing guests with exceptional food is essential
• A desire to learn and progress is preferred, but not essential
